Gum Arabic is a natural gum consisting of the hardened sap of various species of the acacia tree, harvested commercially from wild trees. It is a complex mixture of glycoproteins and polysaccharides, predominantly consisting of arabinose and galactose. Soluble in water, edible, and used primarily in the food industry. Categories include Gum Karaya (Indian gum tragacanth — varieties: Hand Pick Selected Super White, White, Pale Yellow, Yellowish Brown, Brown, Dark Brown) and Gum Fariyawal (yellowish-brown substance, water soluble, major source of technological grade gums).
